a) soft reset of phone:

Backup your data first!
Press *#7780# (*#rst0*) in the standby screen
This non-destructive reset will reset phone settings like profiles, themes
and shortcuts. Data like contacts, calendar and notes are not removed.
b) To hard reset the phone, there are two methods:

1) restore phone to the original factory default settings (software method):

Backup your data first!
Menu -> Tools -> Settings -> General -> Factory settings.
OR *#7370# (*#res0#) in standby screen!
Here you need to enter the lock code (usually 12345)
Phone will restart, and factory settings restored.
2) To hard reset (format) Nokia N78 (hardware method, incase phone wont boot):

Turn off the mobile phone.
Press and Hold the following three buttons:
Multimedia button, the “*” button, and the number “3″ button.
While holding these three buttons, press the power button to switch on the device.
Release your fingers when the screen displays the Nokia Logo and the language selection menu further.
Most site mention the Green Call key instead of the Multimedia button, which does not work for the nokia N78 (atleast my N78, firmware 12.046)!
